Peppermint Stick Ice Cream

Enjoy this delicious ice cream with a candy cane twist.

INGREDIENTS

  • 6 egg yolks
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 1 Tablespoon vanilla
  • 2 teaspoons peppermint extract
  • 1 cup half and half
  • 2 cups heavy whipping cream
  • 1/2 cup crushed candy canes

INSTRUCTIONS

  1. In a medium saucepan, whisk together egg yolks, sugar, salt, vanilla, peppermint extract, half and half, and heavy whipping cream.
  2. Heat over medium heat while whisking. Heat and whisk until custard starts to just barely bubble on the edges. Remove from heat just before custard starts to boil.
  3. Immediately pour custard into a new container to stop the cooking.
  4. Cover the custard with plastic wrap so that the plstic is pressed against the top of the custard. (This prevents a skin from forming on the top of the custard as it cools.)
  5. Refrigerate for 6 hours or overnight, until custard is completely cold.
  6. Churn cold custard in ice cream maker according to your ice cream maker’s instructions.
  7. Work quickly to transfer ice cream to a freezer safe container. Quickly mix in crushed candy canes. Cover and freeze.
  8. Freeze ice cream for 2-4 hours or until completely frozen.

NOTES

Recipe Tip; I like to use a flat whisk for this recipe. It really helps to get into the corners of the saucepan so that you don’t get spots that aren’t mixed well that could potentially thicken too much or burn.

Plum Bread

I found this recipe in my mom’s collection of recipes years ago and it immediately piqued my interest. I knew I had to make it! My mom got this recipe from her mom, and my grandma used to make it all of the time back in the 1970s. My mom loved this bread growing up, and now I make it for my family and we love it too!

This bread is so delectably moist and delicious. Whenever plums are in season, you better bet you’ll find me making this recipe. Plums are in season from summer through early fall, so right now is the perfect time to make this bread!

When choosing a plum, hold it in the palm of your hand, it should feel heavy. Make sure to choose ones that aren’t too squishy and overripe. A ripe plum should be firm but have some give when you lightly squeeze it.
