Zucchini Bread

This delicious zucchini bread makes for an amazing and healthy snack anytime of day!

INGREDIENTS

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 Tablespoon cinnamon
  • 1 Tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups grated zucchini
  • 2 Tablespoons sugar for dusting

INSTRUCTIONS

  1. Preheat oven to 325 degrees.
  2. In a large bowl whisk together eggs. Add oil and whisk.
  3. Add 2 cups sugar, cinnamon, and vanilla. Whisk until combined.
  4. Add flour, salt, and baking powder. Stir until almost combined.
  5. Add grated zucchini. Stir until combined.
  6. Spray two 8×4 inch bread pans really well with non-stick cooking spray. Divide batter evenly between both pans.
  7. Sprinkle 1 Tablespoon of sugar over each loaf of bread.
  8. Bake 50-65 minutes or until a toothpick inserted into the middle comes out completely clean.

Plum Bread

I found this recipe in my mom’s collection of recipes years ago and it immediately piqued my interest. I knew I had to make it! My mom got this recipe from her mom, and my grandma used to make it all of the time back in the 1970s. My mom loved this bread growing up, and now I make it for my family and we love it too!

This bread is so delectably moist and delicious. Whenever plums are in season, you better bet you’ll find me making this recipe. Plums are in season from summer through early fall, so right now is the perfect time to make this bread!

When choosing a plum, hold it in the palm of your hand, it should feel heavy. Make sure to choose ones that aren’t too squishy and overripe. A ripe plum should be firm but have some give when you lightly squeeze it.
