Chewy Oatmeal Chocolate Chip Cookies

My favorite oatmeal cookie recipe! These cookies have the best, chewy texture. Make these with chocolate chips or with raisins. Either way they will be delish!

INGREDIENTS

  • 1 cup butter flavored shortening
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon warm water
  • 1 1/2 cups flour
  • 2 cups old fashioned oats
  • 1 cup chocolate chips

INSTRUCTIONS

  1. Preheat oven to 375 degrees.
  2. Beat shortening and sugars together.
  3. Add eggs, vanilla, and salt. Mix until combined.
  4. Pour baking soda into a small cup. Add warm water and mix together. Pour mixture into cookie dough. Mix to combine.
  5. Add flour, old fashioned oats, and chocolate chips. Mix just until combined.
  6. Scoop out cookies onto a baking sheet. Bake 8-10 minutes.

NOTES

I don’t recommend any substitutes for the butter flavored shortening. It makes these cookies so delicious. You could use regular butter, but I haven’t tried it. I always use the shortening.

Plum Bread

Plum Bread

I found this recipe in my mom’s collection of recipes years ago and it immediately piqued my interest. I knew I had to make it! My mom got this recipe from her mom, and my grandma used to make it all of the time back in the 1970s. My mom loved this bread growing up, and now I make it for my family and we love it too!

This bread is so delectably moist and delicious. Whenever plums are in season, you better bet you’ll find me making this recipe. Plums are in season from summer through early fall, so right now is the perfect time to make this bread!

When choosing a plum, hold it in the palm of your hand, it should feel heavy. Make sure to choose ones that aren’t too squishy and overripe. A ripe plum should be firm but have some give when you lightly squeeze it.
