Breakfast Puff Pastry Tarts

I love anything puff pastry and this is one of my favorite ways to use it for breakfast.

I love anything puff pastry and this is one of my favorite ways to use it for breakfast. These savory tarts are quick and easy to make and so delicious.

The recipe below is a basic outline for how to make these tarts. I don’t give exact measurements for all of the ingredients because this recipe is totally customizable to what you like. Try it as listed below or test out other ingredients like cooked crumbled sausage, sauteed onions, diced tomatoes, etc. There’s so many possibilities!

INGREDIENTS

  • 1 sheet puff pastry
  • 9 eggs
  • salt and pepper
  • shredded cheese- like cheddar, cheddar jack, pepper jack, etc.
  • 3 slices mostly cooked bacon or precooked bacon
  • fresh chives, finely chopped

INSTRUCTIONS

  1. Place the oven rack in the middle of the oven. Preheat the oven to 400 degrees.
  2. Thaw puff pastry sheet according to package directions. Roll puff pastry out into a 13×13 inch square. Carefully lift it and place it on a baking sheet.
  3. Fold one edge over ½ inch and then fold it over again another ½ inch to create a tight border. Repeat with the other edges to create a border around the entire square.
  4. Crack eggs over the puff pastry, evenly spreading them out within the border.
  5. Dip a pastry brush in the egg whites of the eggs on the puff pastry and brush the edges of the border. Make sure the corners are securely pinned down.
  6. Sprinkle the top of the eggs well with salt and pepper.
  7. Sprinkle the shredded cheese over the eggs.
  8. Dice the bacon into ½ inch pieces. Sprinkle it over the cheese.
  9. Sprinkle the chopped chives over the top.
  10. Bake for 20-24 minutes or until puff pastry is golden on the edges and puffed up.
  11. Cut into squares and serve warm.

I found this recipe in my mom’s collection of recipes years ago and it immediately piqued my interest. I knew I had to make it! My mom got this recipe from her mom, and my grandma used to make it all of the time back in the 1970s. My mom loved this bread growing up, and now I make it for my family and we love it too!

This bread is so delectably moist and delicious. Whenever plums are in season, you better bet you’ll find me making this recipe. Plums are in season from summer through early fall, so right now is the perfect time to make this bread!

When choosing a plum, hold it in the palm of your hand, it should feel heavy. Make sure to choose ones that aren’t too squishy and overripe. A ripe plum should be firm but have some give when you lightly squeeze it.
