Mini German Pancakes with Berry Sauce

This twist to a german pancake is one of my favorite recipes to use with my berry sauce.

These mini german pancakes with my signature berry sauce are a delicious treat to start your morning. Super easy to make and tastes like they are straight from a bakery you will love how these little pancakes taste.

INGREDIENTS

  • 1/4 cup butter, melted
  • 1 cup milk
  • 1 cup flour
  • 6 eggs
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • BERRY SAUCE
  • 3 cups frozen mixed berries
  • 1/4 cup sugar, or to taste
  • 1 Tablespoon cornstarch
  • 1 Tablespoon water

INSTRUCTIONS

  1. Preheat oven to 400 degrees.
  2. Melt butter and set aside.
  3. In a blender, combine milk, flour, eggs, vanilla, and salt. Blend until smooth.
  4. Add melted butter and blend again until smooth.
  5. Spray the cups of a cupcake pan with non-stick cooking spray. Divide batter evenly between the 12 cups.
  6. Bake 15-20 minutes or until tops edges of pancakes are golden.
  7. While pancakes are baking, make berry sauce.
  8. Combine berries and sugar in a medium saucepan. Cook over medium heat while stirring frequently.
  9. Cook until berries are really juicy and the juice comes to a simmer.
  10. In a small bowl, whisk together cornstarch and water. Pour into simmering berry sauce.
  11. Stir and cook until sauce is thickened. Remove from heat.
  12. Serve berry sauce over warm pancakes and top with whipped cream if desired.

NOTES

Mini German Pancakes will poof up as they bake. Once you pull them out of the oven, they will deflate as they cool. Also, you can adjust the amount of sugar in the berry sauce to your liking. Taste it as you make it. If it’s too tart, add more sugar by the tablespoon until you get the sweetness you like. If berry sauce gets too thick after you’ve added the cornstarch slurry, you can add a little water if needed to get the consistency that you want.

Plum Bread

Plum Bread

I found this recipe in my mom’s collection of recipes years ago and it immediately piqued my interest. I knew I had to make it! My mom got this recipe from her mom, and my grandma used to make it all of the time back in the 1970s. My mom loved this bread growing up, and now I make it for my family and we love it too!

This bread is so delectably moist and delicious. Whenever plums are in season, you better bet you’ll find me making this recipe. Plums are in season from summer through early fall, so right now is the perfect time to make this bread!

When choosing a plum, hold it in the palm of your hand, it should feel heavy. Make sure to choose ones that aren’t too squishy and overripe. A ripe plum should be firm but have some give when you lightly squeeze it.
